Gluten Free Quiche
Ingredients:
Crust:
1/2 C blanched almond flour
1/2 tsp sea salt
1/2 tsp baking soda
2 Tbsp green onion
2 Tbsp parsley
1 Tbsp cilantro
(use herbs generously)
1/4 C grapeseed oil
1 Tbsp water
Filling:
3 eggs
3 leeks
1/4 C cheddar cheese
1-1/2 Tbsp feta cheese
1/2 tsp Old Bay seasoning
1/2 tsp black pepper
Dash of cayenne pepper
1 tsp nutritional yeast
1/2 tsp garlic powder
1 tsp no salt seasoning
(Place items above in blender and then mix with vegetables below)
1 large zucchini, chopped
1 tomato, chopped
1 C chopped spinach
Method: Bake crust at 350 degrees for 12-14 minutes. Let cool before adding filling.
Add filling to crust and bake at 350 degrees for 30-35 minutes.
