Squash Fritters

Ingredients:
- 2 cups squash
- 1 medium onion
- 1 egg
- salt and pepper to taste
- 1/2 cup fresh herbs chopped (basil, oregano, parsley, thyme, or whatever you want!)
- 1 cup oil of choice
Method
- Chop the squash and onion. Mix in a bowl with 1 egg
- Salt and pepper to taste
- Mix in 1/2 fresh herbs
- Heat oil in a skillet
- Shape squash mixture into small balls, and drop into oil. Cook for three minutes on each side.
- Transfer to a paper towel.
- Top with fresh tomato sauce and parmesan cheese.
