When speaking with Brent Cowan, who with his business partner Kyle Butters, owns High Tide Catering and the Landing Restaurant in Virginia Beach, a theme emerged: their business is dedicated to creating amazing, seasonal food, while providing a welcoming and inclusive atmosphere. The restaurant has tasty seasonal dishes, excellent presentation. You are welcome for a special occasion or date, but also to bring the kids for lunch in their soccer gear to enjoy and after game burger.
Brent has worked in restaurants most of his life and has always loved the challenge and creativity inherent in cooking. Growing up locally, he has always appreciated the culinary opportunities in Hampton Roads from great produce, to the seafood from the Bay. Owning a restaurant had long been a dream. While working in other restaurants in the area, Brent and Kyle began to be approached by friends and family, and finally a wider circle of clients, to cater events. As a result they began High Tide Catering in 2009. With the success of High Tide Catering and the opportunity to purchase a property in on North Landing Rd in Virginia Beach, they started The Landing Restaurant on July 28th, 2014.
In both businesses, using fresh local ingredients whenever possible is a must. Brent insists that eating seasonally is a full sensory experience that connects us to a sense of time and place. Such food tastes better because you are eating with appreciation for what went into the growing, harvesting, and preparation of your dish. If there are no farms, there is no food. Supporting the agricultural community in Hampton Roads supports a way of life and a culture that provides important food experiences. Brent and Kyle use local food in High Tide Catering and The Landing because they believe restaurants play a vital role in supporting local agriculture. They have a valuable opportunity to educate through taste and experience. Brent says the best part of his job is when a customer simply says “Thank You. Thank you for this meal.”
To stay connected to the farms he sources from, Brent often visits farms, gets to know what they have in season, or what they have coming up, and get to know the people. The Landing currently sources regularly from Heads-up Hydro Greens, New Earth Farm, and Cullipher Farm.
